Stainless steel and hard anodized will cook almost anything. Copper heats fast but requires frequent cleaning to maintain the finish and heat conductivity. The heavier the better because the heat will be evenly distributed on heavier metal giving you more even cooking. Teflon coated is a nice feature but there is some controversy over whether it’s really healthy and you have to use special utensils so you don’t scratch the teflon finish.
